It actually doesn't get any better than this pork.

Purebred Berkshires are a traditional breed that was almost lost in the shuffle to genetically design a confinement hog. They are friendly, sweet and of the old world round shape. Their meat is pink, almost red (all other pork requires nitrites to make the ham pink!), and the ham, steaks and roasts hold moisture when cooked. The chops actually have intramuscular fat, something most people have never seen. The bellies are not the current market kind, but more flavor-fat filled than the modern racehorse hog so their bacon is deliciously fat (the right kind of fat). This is the favored hog of the Weston A. Price style of indigenous nutrition, as well as being the #1 most desirable hog for gourmet chefs all over. The meat has actual FLAVOR and needs very little salt, sugar or spice to be a "wow" eating experience every single time. The hams are so delicious as  they come they need nothing but baking.  I put them flat-side down in the oven in an uncovered ceramic pan with NOTHING. Cook it for 2 hours at about 300 degrees (160+ inside) and THAT'S IT! It must be tasted to be believed. Save the juices & fat for the best ham gravy in the world!
