Hummus
Hummus is an excellent all round food. It can be used as a dip, a spread, as a sauce and a garnish. You could make yourself a quick, healthy meal by cutting a few carrots, some mushrooms, some cherry tomatoes and dipping them in the hummus you have made.
Recipe:
1 can of chickpeas 1/4 cup liquid from a can of chickpeas 3-5 tablespoons lemon juice (depending on taste) 1 1/2 tablespoons tahini 2 cloves garlic, crushed 1/2 teaspoon salt 2 tablespoons olive oil
Take all the ingredients except for the chickpea liquid, and put it into a blender or food-processor. Once you have combined the ingredients add in the liquid and blend for five minutes on low. Put it into a dish, add olive oil and serve. This hummus is the traditional tahini hummus – which cannot be substituted. However, if you do not appreciate tahini then you may omit it. It can be refrigerated for up to 3 days or frozen for up to one month.
