As a kid we used to snap green beans & mom would cook them with new potatoes with a big chunk of ham. That was a meal by itself! I came up with this way to do it that is a little more convenient. While it is not as good as using the fresh beans & simmering them all day, this one works pretty good.
Heat the oil in a pan, cook the onions, jalapeno peppers & garlic for about a minute. Add the potatoes & continue to cook until the potatoes get a little brown ( you can throw in the bacon now)
Add about 1/2 cup of hot water & DE-glaze the pan. Add the green beans (water & all), season to taste & simmer on low for about half an hour. Very good side dish & not a lot of calories, either.
