This was not my moms invention, they used to teach it to kids in home economics class, long ago. It is simple but feels like something fancy. Plus it is one of those good memories from my childhood, & I made it for my son on occasion.
Heat the milk. Brown the margarine in a saucepan, add the flour, salt, and pepper, and mix well. Then add the hot milk and stir until the sauce thickens. Chop the whites of the hard-cooked eggs into small pieces, and mix them with the white sauce. Arrange the toast on a plate and pour the sauce over it. Crush the egg yolks and sprinkle them on top of the white sauce. Serve hot.
