It’s been a busy tiring week already, and what works for me is last second, whatever you have in the fridge, dinner- which in our house translates to individual quiches. (Individual just because they cook faster). Warm, filling, cosy, and even Squeaker will eat it without complaint.
So- turn oven on to 425, liberally grease an oven safe bowl, (french onion soup bowls work great for this), and stuff one slice of bread (white is better) in the bottom. Then add two or more of the following:
bacon
spinach
ham (lunch meat deli ham works in a pinch)
olives
mushrooms
asparagus
sausage
onions
cooked shredded chicken
whatever else you have in the fridge that sounds good
Sprinkle on a good sized hand full of whatever cheese you have laying about- Irish cheddar is delicious but anything will do. Then beat two eggs, (per each bowl), a good splash of milk, (1/4 cup?), and two or more spices:
onion powder
garlic salt
pepper
cumin
italian seasoning
fresh basil
whatever you have in you spice rack that’s itching to be used
Pour this over the bowl of ingredients you have going and smoosh it down a bit so that the egg mixture coats all your other things. Tuck into the oven- bake for 20-30 min. The cooking time sort of depends on your bowl and what you put in it. When the egg puffs up and looks all crusty and lightly brown, and nothing jiggles in the center- then it’s done. If you did a good job greasing your bowl you can turn it out onto a plate so that you don’t burn your fingers off while eating dinner.
So there you have it, that’s what works for us! That and using kitchen scissors for EVERYTHING. Really, I made this for dinner tonight and I used the scissors on the ham, bacon, and spinach. Plus they’re great for cutting up toddler food- pizza, sandwiches, quesadillas...whatever.
