      <title>Cooking with Kids: Mimi’s Moroccoan Couscous Stuffed Chicken</title>

She hosts cooking parties for kids 3-12. She has shared one of favorite ethnic recipes with us.&lt;br/&gt;&lt;br/&gt;Moroccan Couscous Stuffed Chicken&lt;br/&gt;serves 4&lt;br/&gt;&lt;br/&gt;Ingredients:&lt;br/&gt;&lt;br/&gt;2 chicken breasts, butterflied, and split in half, and pounded thin&lt;br/&gt;(makes 4 thin chicken fillets)&lt;br/&gt;canola oil for browning&lt;br/&gt;&lt;br/&gt;For Couscous:&lt;br/&gt;&lt;br/&gt;2 tablespoons butter&lt;br/&gt;¼ cup finely chopped red onion&lt;br/&gt;½ cup chopped dried fruit such as dried apricots, prunes, and peaches&lt;br/&gt;2 tablespoons sliced almonds&lt;br/&gt;1/8 teaspoon ground cumin&lt;br/&gt;1/8 teaspoon ground coriander&lt;br/&gt;1/8 teaspoon ground cinnamon&lt;br/&gt;2 tablespoons minced parsley&lt;br/&gt;1 package chicken herb couscous&lt;br/&gt;1 ¼ cup water&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;Directions:&lt;br/&gt;&lt;br/&gt;Preheat oven to 350 degrees.&lt;br/&gt;&lt;br/&gt;Melt butter in medium saucepan over medium-low heat. Add red onion and sweat  for 2 minutes. Add dried fruit, almonds, cumin, coriander, and cinnamon. Cook another minute.&lt;br/&gt;&lt;br/&gt;Add parsley and couscous package flavoring, stirring well to combine. Add couscous, stirring well to combine.&lt;br/&gt;&lt;br/&gt;Add water, bring to a boil. A soon as it comes to a boil, turn off heat an cover. Let stand, covered, for 5 minutes. &lt;br/&gt;&lt;br/&gt;Uncover and fluff with a fork. Set aside.&lt;br/&gt;&lt;br/&gt;Place pounded chicken breast on cutting board, season with salt, pepper and a pinch of cumin. &lt;br/&gt;&lt;br/&gt;Place a small mound (about 1 tablespoon, depending on the size of the chicken breast) of couscous on wider end of chicken breast and begin rolling breast over couscous beginning from the widest end towards the narrow end. Set aside and repeat with rest of chicken breasts. &lt;br/&gt;&lt;br/&gt;Heat large non-stick skillet over medium-high heat. Add 2 tablespoons canola oil and allow oil to heat up. Brown stuffed chicken breasts on all sides and place on a baking sheet. Bake in preheated 7 – 8 minutes.&lt;br/&gt;&lt;br/&gt;Remove from oven, slice each breast on a bias and serve.&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;</description>

We feel such a connection to them when do do this. We dance silly and serious. I teach my kids disco moves, the pop and lock, and the pretzel. My daughter teaches me ballet while my son tries to get me to break dance on the floor. Our latest dance is to African music! These are such precious memories and I cherish them! &lt;br/&gt;What about your family?</description>
