Brunch ideas

three different egg recipe you chose which you like best


1) Linda's favorite scramble eggs with spinach and mushroom

Depend on number of people you cook for

for my family of five


6 eggs- scramble

one box slice mushroom-use half of box (5 serving)

3-4 cup of spinach

few dash Tabasco

organic cheese jack ( I use this because regular cheese seem give me sinus problems

1-2 tablespoon of low fat butter


melt butter in a frying pan at med heat

stir fry mushroom 3-5 min depend how crisp you want

then add spinach and cook for 2 min more

then add scramble egg in and let cook about 3 min before you stir

then add dash of Tabasco and pepper then cook and stir until egg cooked well

Then add organic jack cheese ( any cheese you prefer)

 cheese melt then Serve with fruit salad


fruit salad

cut up  banana

           strawberry

           blueberry

           then add vanilla yogurt

           mix up together


If you don't like spinach or mushroom


2)  Egg casserole


step 1-cut up 6 slice of bread in cube size

         - put it in 9 x 13 dish- be sure bread cover the bottom

         - 1 pkg of cheddar/jack -usually two cups pkg cheese( best organic cheese)

           spread on top the bread

         - scramble 6-8 eggs- spread on top cheese and bread


step 2-then cover with foil and put in ref overnite


step 3-preheat oven 350


step 4 -cook in morning- put in oven at 350 for 30 min


Step 5-In bowl mix together one can of cream of mushroom soup

           with 1/8 cup of milk(better low fat or 1% milk

          add chopped cook sausage and mix


step 6- take out the egg casserole and pour sauce mixture on top of casserole

and cook again about 10 more minute


then take let it stand for 5 min

then eat. you can use same fruit salad above

 

3) mini quiche

    3 scramble eggs

    3 chopped green onion

    3 chop zucchini

    4 chopped bacon or chopped sausage or chopped ham

    jack cheese or Swiss cheese 2 cups


step 2

 read made pie crust dough

lay flat dough - roll out dough so expand and look little thin but not too thin and not too thick

use round shape ( biscuit cutter of not have then use round glass shape)

put small round shape in mini muffin pan(pampered chef type mini muffin pan)- use shape stick to put it in each

then put egg mixture in each dough that in pan(usually use a small scoop up egg mixture and put in each dough


preheat oven at 425 and cook about ten min -20min watch closely look like rise up and bubblling
